Somerset varieties selected for quality over yield from our traditionally planted, zero-spray orchard. Keeved cider, known as bouché in Normandy, must be carefully guided over at least a year from harvest through to maturation in the bottle. It results in a naturally off-dry, ripe-fruit sparkle with more complex notes granted from the long contact with the lees. No sulphur. No cultured yeasts or finings. 100% apple.
