Welcome to Thornfalcon

On September 05 & 06 2026, Thornfalcon is throwing open its doors and gates to host a weekend of great food and wine, with a series of events rooted in land, produce, craft and hospitality.


Our September opening weekend kicks off our new programme of Tours and Tastings, a Supper Clubs series and Wine School in Somerset, and a creative, wellness and corporate retreats offer.

Thornfalcon's first Supper Club

A farm-to-table, five course eating experience celebrating the very best of Somerset's seasons and produce in Thornfalcon's spectacular Red Barn, led by acclaimed chef Ross Stacey. After fifteen years at London's legendary River Café, Ross' cooking is rooted in Italian tradition and defined by simplicity, generosity and flavour. Expect freshly made pasta and bread, vegetables picked hours before service, open-fire cooking and beautifully prepared vegetables, meat and fish, all paired with Thornfalcon wines, ciders and seasonal drinks. Ross will be joined by Davide Bonaldi for a menu inspired by September's finest seasonal ingredients - partridge, pumpkin, mushrooms, green beans, scallops and pears. Vegetarian and vegan options available on request, all paired with Thornfalcon wines, ciders and seasonal drinks.

Cooking masterclasses with leading chefs

Thornfalcon’s opening weekend will include cooking masterclasses with Ross Stacey and Davide Bonaldi - two charismatic chefs who have cooked in Michelin starred restaurants and for clients and celebrities around the world. 

Ross Stacey’ cuisine is shaped by a love of flavour and an approach rooted in Italian tradition, honed after 15 years at London’s The River Café, most recently as their Senior Chef. His food is vibrant, seasonal and expressive—centred on exceptional produce - and features open-fire grilling, wood-fired cooking and freshly made pasta and bread. 

An expert on outdoor grilling, Ross has prepared multi course feasts from locations as diverse as the sores of a loch in the Highlands, to deserted island beaches in Belize. 

His masterclasses will focus on mastering the art of outdoor cookery - from fresh vegetables, to meat and fish – with classic Italian flair. Ross will walk participants through the processes, from preparing the grill and judging how best to cook wood and charcoal, to selecting the best fresh vegetables from Thornfalcon’s vegetable garden. He will teach participants how to make marinades and ‘verdura mista’; prepare, season and cook meat and fish for maximum flavour; and judge when these are perfectly cooked.

Davide Bonaldi is a renowned Italian chef, who leads the famous restaurant and pasta laboratory, the Laboratorio Caprini near Verona in Italy. Descending from a family of chefs, Davide honed his craft in Michelin-starred restaurants in London, before creating his pasta Laboratorio to showcase the art of pasta-making, and teach others about his beloved Italian culinary traditions.

Davide’s legendary pasta workshops teach everyone the art of pasta, and sharpen our skills with the rolling pin. Everything is done by hand, and under Davide’s watchful eye, participants will learn to knead and hand-roll 2 metre pasta sheets, cutting into tagliolini, pappardelle, and tagliatelle using only a knife and their chef’s expertise

Each masterclass will be 1.5 hours in length, for up to 16 participants, and cost £40. Supper Clubs is £65.
